INGREDIENTI: per 0 persone
  • 1 lb potatoes
  • ⅝ lb agretti (opposite leaved saltwort)
  • 3 ½ oz Asiago cheese
  • 2 spring onions
  • 2 anchovies
  • chili pepper
  • lemon
  • Extra Virgin Olive Oil
  • salt and pepper
PREPARAZIONE:

Trim and wash the agretti in boiling salted water for 2 minutes, then drain. Boil the new potatoes, checking doneness with the tip of a knife. Then drain. Arrange the agretti on individual plates. Place the potatoes and shaved asiago cheese on top. Drizzle with a dressing made from blending chopped spring onion with oil, salt, pepper and lemon juice. Finish with pieces of anchovies.
