  • 1 lb all-purpose flour
  • ⅝ lb almonds
  • ⅝ lb sugar
  • ⅝ lb butter
  • 3 egg yolks
  • 1 lemon zest , grated
Preparation

Peel the almonds and finely chop them, then toast in the oven with half of the sugar and leave to cool. In a bowl, beat the butter with the remaining sugar, and add the egg yolks, flour, grated lemon rind and finally the almond mixture, amalgamating all the ingredients well. Grease a cake pan, pour in the mixture and bake at 350° for about 45 minutes. Remove from the oven, leave to rest in the oven-dish for 10-15 minutes, then serve.
