INGREDIENTS for 0 people
  • 1 ¼ lb fresh anchovies
  • 2 cloves of garlic
  • 1 onion
  • 4 crispy bread croutons
  • ½ cup extra virgin olive oil
  • pepper to taste
  • 1 lb tomatoes
  • 1 cup parsley
  • salt to taste
  • 1 cup dry white wine
Preparation

Clean anchovies removing head and tail and rinse thoroughly (if possible in sea water). In an earthenware pot sauté the finely chopped onion and parsley with oil and a clove of garlic. Then add the diced peeled seeded tomatoes and cook for fifteen minutes. Season with salt and pepper to taste, add the white wine, half a glass of water and the anchovies.

Cook for another fifteen minutes. Place a water cracker into each soup plate (or a slice of toast) rubbed with garlic, pour over the soup, wait a few minutes and serve.
