Arrosticini (Abruzzo Style Kebabs)
- 2 lb mutton meat
- pepper to taste
- salt to taste
Cut the meat into small pieces to be threaded into wooden skewers about 25-30cm long. The kebabs should be charcoal-grilled over a low heat.
The traditional recipe uses exclusively lamb or mutton, avoiding cooking methods other than that given (for example hot-plate or oven). The meat cooked like this is accompanied by home-made bread moistened with olive oil.
