INGREDIENTI: per 0 persone
  • ½ lb broccoli
  • 4 oz endive
  • 3 ½ oz egg white
  • grated Parmigiano Reggiano cheese
  • 4 eggs
  • all-purpose flour
  • butter
  • cooking cream
  • lemon
  • nutmeg
  • Extra Virgin Olive Oil
  • salt and pepper
Preparation

Trim the broccoli and wash under running water. Dry and separate the florets. Boil florets, including the stems, in a generous amount of salted water. Drain boiled broccoli and puree with a tbsp of cheese, a little grating of nutmeg, salt, pepper, egg whites and a tsp of cream. Mix together until smooth. Butter and flour 4 crème caramel molds. Divide the broccoli mixture between the molds and level off. Place molds in a hot bain marie and bake in a 350°F oven for 20 minutes. Remove from the oven and unmold onto individual plates. Finish each broccoli tart with an egg cooked in butter. Garnish with julienned endive, dressed in oil, lemon, salt and pepper. Serve immediately.
