Beef in Oil or Rovato Beef
- 4 pounds of beef meet
- 7.055 oz anchovies
- olive oil
- 1 lt of broth
Braise the meat in a pan in olive oil with the vegetables, add the broth, close with the lid and leave to simmer for at least 3 hours.
Remove the meat from the pan, blend the vegetables which will be mixed with the sauce prepared separately with anchovies, chopped parsley, capers and garlic (to be removed after cooking) in the olive oil.
Put the meat, the blended vegetables and the sauce back into the pan and let it cook for another hour, then slice the meat and serve, covering it with the sauce and serving aside with fresh polenta.
