  • 4 eggs
  • ⅝ lb all-purpose flour
  • 3 ½ oz potato starch
  • 5 oz butter
  • 1 cup milk
  • ⅝ lb sugar
  • 1 package baking powder
  • lemon zest , grated
  • orange zest , grated
  • 3 ½ oz raisins
  • 1 ¾ oz mixed candied fruit
Preparation

Beat the eggs with the sugar and add the butter melted in a Baine Marie. Stir with a wooden spoon and add the raisins previously soaked in hot water, then dried and lightly coated in flour. Add the grated lemon and orange rind. Add the candied fruit in pieces and the flour a little at a time and, if necessary, add a little milk to soften the mixture. Fill a buttered, high-sided mold with the mixture and bake in a hot oven at 425°F for about 30 minutes (check the cooking by inserting a toothpick, which should emerge dry from the inside of the sweet).
