  • 3 layer sponge cake
  • 1 ¾ lb ricotta cheese
  • ¾ lb sugar
  • 1 package vanilla powder (or vanilla extract)
  • 1 ¾ oz dark chocolate
  • 1 lb cherries , black

Stone the cherries, using, if available, the special tool which eliminates the stone without splitting the fruit itself. Gather the stoned fruit in a soup plate. After sprinkling, layer by layer, with sugar (no more than 2 spoonfuls in all), leave to steep. Separately, meanwhile, put the Ricotta on a soup plate, crush with the prongs of a fork, and sprinkle with sugar and vanillin. Leave to rest for about half an hour, then mix the finely chopped chocolate into the delicate cream obtained (if it is not fine enough, sieve it). Lay on a large circular plate one of the three disks of spongecake and spread on top a third of the Ricotta cream. On top of the cream arrange a third of the cherries in a compact layer; then make on top of this triple layer two more layers of spongecake, cream, and cherries. Put the cake into the fridge for three or four hours (minimum), then serve.
