Black Copate Wafer Biscuits
- almond , peeled, toasted and crushed
- walnut kernel
Cook a mixture of sugar and honey, in equal parts, till it becomes caramel, fairly dense, almost burnt. At this point, add to the steaming mixture for every 500gr of sugar and 500gr of honey, about 1kg and 200gr of almonds toasted and chopped together with the walnuts (selected) which have undergone the same treatment. Put the hot almonds and walnuts into the sweet steaming mixture. Remove from the heat after energetically mixing. Put small portions between two round “cialde” wafers, (like those once used in Italian pharmacies to take medicines) and serve cold.
