  • 1 ¾ oz ham
  • 1 ¾ oz onion
  • ½ carrot
  • 1 stalk celery
  • 1 clove of garlic
  • 2 tablespoons oil
  • ½ lb ground beef
  • ½ oz dried mushrooms
  • ½ cup red wine
  • 7 oz canned tomatoes
  • ½ tablespoon all-purpose flour
  • 1 pinch parsley
  • 1 pinch marjoram
  • 1 pinch nutmeg
Preparation

In a pan, sauté the chopped ham in the oil, and as soon as it browns, add the onion, carrot, celery and garlic (already lightly browned separately), the coarsely minced meat and the mushrooms. Cook over moderate heat for some minutes, douse with the wine, add the chopped parsley and marjoram, and season with salt, pepper and nutmeg. When the wine has completely evaporated, add the flour (stirring it in away from the heat to avoid it sticking to the bottom of the pan), put back on the heat and leave to cook for some seconds. Add the tomato and reduce the sauce over moderate heat, dousing from time to time with a tablespoon of water. Remove the pan from the heat as soon as the sauce is well amalgamated and slightly thickened.
