Bolzano Style Salt Cod and Potatoes
- 1 lb salt cod
- 1 ½ lb potatoes
- 2 oz butter
- 1 onion
- 1 clove of garlic
- 1 cup heavy cream
- 1 leaf of bay leaves
- salt and pepper
Put the salt cod to soak in water for a day. The next day boil until the flesh comes away easily from the bones.
Boil the potatoes in their skins, peel while still hot and then leave to cool.
Drain the salt cod, remove the skin and bones and break into bits by hand.
Sauté in butter the chopped onion and garlic, add the pieces of fish and the potatoes in slices, salt and pepper. Brown everything well adding the bay leaf.
Blend in the cream, stir gently and serve hot sprinkled with parsley.
