  • 1 ½ lb broad beans
  • 2 cloves of garlic
  • crustless white bread
  • grated Pecorino cheese
  • leaf of mint
  • vinegar
  • extra virgin olive oil
  • salt
Preparation

With a very sharp knife, trim the fibrous edge of the pods without letting them open, then wash them and boil them whole in salted water. Drain and transfer to a pan in which the garlic was browned in the oil. When almost cooked, amalgamate the inside of the bread with the vinegar, the cheese and the torn mint leaves, and then pour the mixture over the broad beans. Leave to rest and serve warm or cold.
