Brustengo (Potato and Cabbage Flan)
- 1 savoy cabbage
- 1 lb potatoes
- 1 clove of garlic
- 6 tablespoons extra virgin olive oil
Put the shredded cabbage and the potatoes, peeled but whole, into a pot full of salted water. Boil, drain well, and mash the potatoes with the prongs of a fork. Mix the potatoes with the cabbage, heat the oil and peeled and crushed garlic in a pan, blend in the potatoes and cabbage, and mix well with a wooden spoon to form a kind of pie. Leave to brown on one side, turn over and finish cooking. Serve immediately.
