  • 1 lb all-purpose flour
  • 5 oz sugar
  • 1 ¾ oz butter
  • ¾ oz fresh yeast
  • 2 eggs
  • 1 cup milk
  • 1 ¾ oz raisins
  • 2 teaspoons anice seeds
  • salt
Preparation

Mix together the flour, sugar, an egg, the butter melted in a Baine Marie, the milk, the yeast dissolved in a little warm water, and a pinch of salt. When a soft dough has formed, add the raisins softened in warm water and the aniseeds. Leave to rise for about 2 hours in a warm place, covered with a dish towel. On an oven sheet, prepare a ring-shaped cake with the butter and cut the surface lengthwise with the tip of a knife. Leave to rest for another hour. Brush with beaten egg and bake in a moderate oven at 350°F for 1 hour. Serve warm.
