Canapés with Mozzarella and Zucchini
Wash the zucchini, dry them, trim both ends, and cut them in half. Slice them lengthwise and grill them.
Put the slices of bread one on top of the other and, using a bread knife, carefully trim off the crust on all four sides.
Spread the slices with the mayonnaise, and on top of each lay first the slices of zucchini and then the mozzarella.
Lay the canapés on a damp dish towel, leaving them there right up to the moment of serving.
