Caniscioni Cheese and Meat Pies
- ½ lb grated Parmigiano Reggiano cheese
- 4 ½ oz grated Pecorino cheese
- 1 pork sausage
- 3 ½ oz salami , chopped
- parsley , chopped
- 13 eggs
- 2 lb all-purpose flour
- 1 teaspoon lard
- ½ cup extra virgin olive oil
- 1 egg yolk
- salt and pepper
In a bowl, amalgamate the grated Parmesan and Pecorino with the sausage and salami in pieces. Add the chopped parsley,10 eggs, and mix well. With the white flour, 3 eggs, a teaspoon of lard, half a cup of extra-virgin olive oil and salt, prepare the dough and roll out into a thin sheet.
From this, cut out some rounds (of about 2.4 inches) and put onto each a portion of the mixture. Close by topping with other disks of dough and pressing the edges together with a thumb.
Brush the surface with egg yolk and bake at 400° for 5 minutes.
