INGREDIENTI:

- 8 eggs
- 4 desalted anchovies
- 4 cloves of garlic
- 2 tablespoons parsley , chopped
- 2 leaves of sage , chopped
- 2 tablespoons capers , chopped
- ½ chili pepper , chopped
- ½ cup extra virgin olive oil
- ½ cup red wine vinegar
- lemon juice
PREPARAZIONE:
Fry the eggs in a pan in such a way that the yolk remains liquid. Put all of the chopped mixture into a large pan and sautƩ it (without letting it brown too much) for two minutes. Add the vinegar and the lemon, cook for another two minutes, remove and pour the mixture onto the eggs, leaving them to gain flavor.
