  • 7 oz fresh coconut pulp
  • 1 lemon
  • 1 cup milk
  • 1 pear
  • 1 ¾ oz sugar
  • 1 pinch vanilla powder (or vanilla extract)
Preparation

Grate the coconut flesh into a bowl. Add the boiling milk with vanillin and leave to steep for 24 hours. After this time, filter the liquid, squeezing the coconut flesh forcibly. Add the sugar to the preparation and boil for a moment. Afterwards, allow to cool and mix in the pear, peeled and cut into pieces, the juice and grated rind of the lemon, and then whisk in a blender at constant high speed, until fluid and creamy.
