Basic brown sauce.

Demi-glace sauce is a Spanish sauce reduced over medium heat with the addition, once cooked, of meat essence and, off the heat, dry Madeira wine or any other wine suitable for the final use (1/2 cup of wine for 4 cups of sauce).
