  • 2 oz butter
  • 1 onion
  • 2 leaves of sage
  • ½ lb milk
  • 8 hard-boiled eggs
  • 3 egg yolks
  • parsley
  • 3 ½ oz grated Parmigiano Reggiano cheese
  • cinnamon powder
Preparation

In a pan, sauté a little chopped onion with some finely chopped sage in butter. As soon as it begins to brown, add a glass of milk or cooking cream. Put in the hard-boiled eggs, shelled and halved. After a few minutes, add two or three egg yolks whisked with chopped parsley, grated Parmesan cheese and a pinch of cinnamon powder. Allow the eggs to amalgamate and serve hot.
