  • 8 fennel
  • 1 clove of garlic
  • Extra Virgin Olive Oil
  • salt
Preparation

Choose small, tender fennel for this recipe. Wash, dry and cut into pieces. Sauté a clove of garlic in a large pan containing the oil. When the garlic begins to darken, remove it and add the fennel. Cook for 15 minutes. Season with salt and add a ladleful of water. Cover and cook over medium heat. This is the most Jewish of fennel recipes, however there are also Jewish recipes that have more “neutral” names like fennel alla parmigiana or broiled fennel.
