  • 15 egg yolks
  • 1 lb sugar
  • lemon zest , grated
  • 1 lb all-purpose flour
Preparation

Beat the egg yolks with the sugar, flavor with the lemon zest, add the flour and mix to obtain a very soft dough.

Put everything on a lightly floured pastry-board and form into a long sausage.

Cut into small pieces and shape these into S’s. Butter and flour an oven sheet, put the biscuits onto it quite far apart and bake at 325° for about 40 minutes.
