INGREDIENTI:

- 1 lb fish
- crustless white bread , soaked in milk
- ½ lb butter
- 2 eggs
- 4 egg yolks
- ½ oz salt
- ⅛ oz pepper
- 1 pinch nutmeg
PREPARAZIONE:
In the mortar pound finely the fish with salt, pepper and nutmeg ,then transfer the mixture into a bowl. Pound the panata, add it to the fish and blend the butter in the mixture.
Once the mixture is well amalgamated, mix in, one at a time, the eggs and yokes. Sieve the mixture, put it back into the bowl, stir it a bit in order to soften it the cover with a buttered paper.
Store it a cool place until ready to use it.
