INGREDIENTI: per 0 persone
  • 1 lb all-purpose flour
  • 1 lb milk
  • 3 ½ oz lard
  • 1 oz fresh yeast
  • 4 eggs
  • olive oil
  • salt
Preparation

With the flour, the yeast, the clarified pork fat, the eggs, a pinch of salt and the heated milk, prepare a very soft dough, worked for a long time by beating against the pastry board until it starts to come away from it.

Leave to rise in a warm place for about 2 hours, and then divide into three parts.

Separately, chop up the bacon, gently fry it in a little olive oil and drain it.

Take an oven dish with a high edge and place in it a portion of dough, spreading it over the bottom. Add some small slices of salami, a little bacon, chunks of cheese and some Elder Tree  flowers broken up. Repeat the operation with another layer of dough and filling, cover with the remaining dough and other broken-up Elder Tree  flowers.

Leave to rest for 1 hour and 30 minutes, then place in the oven at 425°.

When it has just begun to color, lower the heat and continue cooking for about 15 minutes.
