Fresh Ham Slices in Caper Sauce
- 12 slices ham , fresh
- 2 eggs
- all-purpose flour
- breadcrumbs
- 5 oz butter
- 1 onion
- 4 desalted anchovies
- 2 tablespoons capers
- vinegar
- broth
- 1 tablespoon parsley
- pepper
Slightly flatten the chops with a meat pounder, season with salt and pepper and lightly flour them. Put into a small casserole, 2 Tbsp of butter and the chopped spring onion, and as soon as this turns golden, mix in some anchovy fillets reduced to a pulp in a mortar, mix, add the chopped capers, the parsley, a spoonful of flour and a little pepper.
Mix over moderate heat for a good minute, dilute with the vinegar, and leave to reduce by 2/3. Add sufficient stock to obtain a slightly dense sauce, mix for some minutes and finish off with 2 Tbsp of butter.
Gently fry 1/3 cup of butter in a pan, put in the slices coated in breadcrumbs, brown on both sides for a couple of minutes over high heat, lower the heat, and continue cooking for 10-12 minutes more, turning the slices from time to time.
Put them nicely golden onto a serving plate, and sprinkle with the piping hot sauce. Optional side-dish: Spinach flavored with butter, served on the side.
