Fresh Ham Slices in Wine
- 12 slices ham , fresh
- 1 cup dry white wine
- 5 oz butter
- all-purpose flour
- 1 lemon
- potato purèe
Slightly flatten the chops with a meat pounder, season them with salt and pepper and lightly flour them.
Fry gently in a pan 1/2 cup of butter, put in the slices, brown all over for a couple of minutes over high heat, lower the heat, and continue cooking for 10-12 minutes more, turning the slices from time to time.
Drain when nicely golden and keep hot. Dilute the cooking liquid with the wine, reduce by 4/5 over very high heat, put the slices back in with the remaining butter and some drops of lemon juice, and leave to gain flavor for some seconds.
Arrange the slices in a crown on a hot serving plate, laying on top fresh letture leaves, garnishing the center with potato purée and then pouring the cooking liquid over the slices.
