Gnocchetti sardi with ham and broccoli
10 oz Gnocchetti Sardi pasta
5 oz ham or pancetta
7 oz broccoli, florets and stalks
2 tbsp extra virgin olive oil
1 knob of butter
A sage leaf
Wash the broccoli, separate the tops and slice the stalks in rounds.
In a casserole, sauté on low heat the ham in dices with a ribbon of oil and the sage leaf.
Add about 1 quart water and bring to boil.
Add a pinch of salt, then throw in the pasta, the broccoli, a knob of butter, the juice of half a lemon and a tbsp of oil.
Cook for about 10 minutes, as the pasta will cook gently by absorbing the water little by little.
When needed, add some more water and stir to blend everything together.
Finish cooking and end by grating the lemon zest.
