Golden Dessert with Melon Sauce

  • ¾ lb all-purpose flour
  • 7 oz butter
  • 2 eggs
  • 7 oz sugar
  • 1 lemon
  • 1 package vanilla powder (or vanilla extract)
  • ½ package baking powder
  • ½ lb confectioners sugar
  • ¾ lb melon
  • 2 cups milk
  • 2 ½ oz starch
  • ½ cup liqueur , sweet
  • salt

In a bowl, work the yolks with the caster sugar to a cream. Add the flour, yeast, a pinch of salt, the grated lemon rind, 3/4 of the butter, melted, and the egg whites whipped to stiff peaks with another pinch of salt. Pour the mixture into an oven-dish with opening sides of about 9,6 inches in diameter, greased with butter and floured, and bake in a preheated oven at 400°F for about twenty minutes. Meanwhile, put the icing sugar into a medium-sized casserole; add half a glass of water and dissolve over very low heat, then add to the liquid the sieved melon flesh and cook until it appears like jam. At this point, dilute with the milk, to which have been added the starch, the vanillin, and the rest of the butter. Bring the liquid to the boil and leave to simmer for some moments. When cooked, without removing from the oven-dish, splash with the liqueur, diluted in the same amount of water. Pour the melon cream on top and put into the fridge to firm up.
