INGREDIENTI: per 0 persone
  • 2 lb gilt-head bream
  • 1 ¾ oz butter
  • white wine
  • all-purpose flour
PREPARAZIONE:

Clean and scale thoroughly the gilt-head, then dry it, coat it in flour, and fry it in butter until half cooked. Remove it from the heat, discard the head and open the fish lengthwise, so as to remove the central bone, without breaking or damaging the fish. Arrange it in an oven dish and put it in the oven, basting with a mixture of equal parts of wine and water. Cook for 20 minutes or so, then serve.
