  • cabbage
  • 1 slice lard
  • 2 pork sausages
  • 1 sprig parsley
  • 1 clove of garlic
  • salt and pepper
  • ½ teaspoon meat extract
  • 1 ¾ oz pork rinds
  • bread slice
  • grated Parmigiano Reggiano cheese
Preparation

Eliminate the outer leaves of the cabbage, rinse thoroughly, and cut them up. Put in a casserole a pounded mixture of lard, skinned sausages, parsley and garlic. Add the cabbage and the rinds previously boiled and cut into strips, and season with salt, pepper and meat extract. Dilute with sufficient water and leave to simmer very gently for more than an hour. At the end, distribute the slices of toast in the serving bowls, and cover with the cabbage soup and grated Parmesan.
