  • 4 ½ lb baby lamb
  • 2 tablespoons lard
  • 2 onions
  • 1 cup dry red wine
  • meat broth , light
  • 7 oz dried mushrooms , softened in warm water
  • 1 tablespoon parsley
  • salt and pepper
Preparation

Cut the kid goat into pieces, thoroughly wash each piece and dry. In a pan, melt the clarified pork fat and gently fry the onions cut into thin slices. Brown the kid goat and as soon as it has become a nice golden brown color, pour over the glass of dry red wine and allow to evaporate in the uncovered pan. Season with salt and pepper to taste. Cover the kid goat with a light meat stock and continue cooking for at least 45 minutes. Finally add the kid goat, the dried mushrooms already soaked in warm water and the parsley, and continue cooking. When the meat is cooked to perfection, remove the pan from the heat and leave to rest for a few minutes. Serve hot.
