Lampascione Onion Flan with Celery Sauce

INGREDIENTS for 0 people
  • 2 lb lampascione – wild onion
  • 7 oz potatoes
  • 1 ¾ oz Pecorino cheese
  • 1 sprig parsley
  • 7 oz celery , white
  • ½ cup extra virgin olive oil
  • egg white
  • salt and pepper

Clean and boil the Lampascioni onions. Peel and boil the potatoes. Dry off the onions and potatoes in the oven, transfer the two ingredients to a blender and add the grated cheese, salt, pepper and parsley. Blend into the mixture the egg white whipped to stiff peaks, fill the buttered molds sprinkled with bread crumbs and put them in an oven pan containing a little water, and bake at 350°F for 15 minutes. Meanwhile, pass the celery through a blender, then a fine sieve, and then enulsify the olive oil, salt and pepper and make the celery sauce. Arrange the celery sauce in the bottom of the serving plate, lay on top the “sformati” and serve immediately.
