INGREDIENTI:

- 4 ½ lb leg of lamb
- ½ lb lard
- garlic
- oregano
- 1 small bunch parsley
- 3 tablespoons extra virgin olive oil
- salt
PREPARAZIONE:
Lard the meat using a mixture made chopping together lard, garlic and parsley. Close the holes with oregano sprigs, then cook in boiling salted water adding the oil to it. Prick the meat with a fork and reduce the cooking juices. The ideal side-dish is potatoes, preferably the type grown into the Sila Mountains, deep-fried then flavored with the meat gravy.
