INGREDIENTI: per 0 persone
  • 1 leg of Mount Bisalta kid
  • extra virgin olive oil
  • 1 ¾ oz butter
  • 1 sprig rosemary
  • 3 cloves of garlic
  • dry white wine
  • salt
PREPARAZIONE:

Prepare the meat of a leg of kid (preferably from Bisalta): with a sharp knife, make some slots in the meat, and insert alternately sprigs of rosemary and half cloves of garlic. Place in a high-sided casserole with a lid. Salt lightly, oil, and add the butter, some rosemary sprigs and two whole garlic cloves. Brown very well over low heat, keeping covered. Pour in the white wine and allow to evaporate. Cook for about 40 minutes, remembering to baste the leg of kid with meat stock and checking from time to time to avoid it burning. Serve with spinach puree.
