Lettuce Braised in Butter and Cheese
- 4 lettuce
- 3 oz grated Parmigiano Reggiano cheese
- 3 oz butter
Wash lettuce leaves and blanch for a minute or two in salted, boiling water. In the meanwhile, melt butter in a pan. Grease a baking dish with butter and arrange the lettuce leaves inside, after having shaken off the excess water. Cover the lettuce with grated Parmigiano. Add melted butter and cook in a 350 °F oven for 15 minutes, making sure to cover the dish. Serve hot as a side dish with eggs or stews.
