  • 3 ½ oz all-purpose flour
  • salt
  • 4 eggs
  • 4 cups milk
  • lemon zest
  • oil
  • egg white , whisked until stiff
Preparation

Work the white flour with the milk, a generous pinch of salt and the beaten eggs. Sieve the mixture, and then flavor it with finely chopped lemon rind and parsley. Cook for about 1 hour over medium heat (possibly in a Baine Marie). When cooked, transfer to an oiled oven sheet with a raised lip. When the preparation is cold and solidified, cut into squares or rhombuses with a knife. Then dip in the egg white whipped to peaks and the bread crumbs, and fry in a pan in abundant oil. Serve hot.
