  • 1 ½ lb small maccheroni
  • broccoli
  • salt
  • frying oil
  • grated Pecorino cheese
Preparation

Clean and divide the broccoli into several fleurettes. Remove any filaments and boil in lightly salted water draining halfway through cooking, then fry in a pan in abundant oil. Boil the “maccheroncini”, draining them when still firm, and dress with oil and Pecorino. Grease with oil a fairly large pan, sprinkle the bottom with grated Pecorino and put in the “maccheroncini”. On top of the “maccheroncini” arrange the fried broccoli, a generous helping of grated cheese, and leave to brown in the oven.
