  • 1 melon , small
  • 1 cup sweet wine
  • 1 ¾ oz sugar
  • 1 lemon
  • 1 tablespoon butter
  • 1 teaspoon starch , or flour
Preparation

Boil the sieved flesh of the melon with the sweet wine and the sugar, until completely reduced to a pulp. Whisk the mixture in a blender with the juice and grated rind of the lemon, adding the butter and starch. Pour the preparation back into the receptacle used earlier and slowly thicken it, over very low heat, stirring gently.
