  • 1 ¾ oz lard
  • garlic

  • 5 oz rinds
  • 1 lb spaghetti
  • cheese
Preparation

Chop together a small piece of garlic and the salted lard, or to taste, the ham, and put this mixture into a casserole with half a tablespoon of clarified pork fat. Sauté a little and then add a tablespoon of tomato conserve. Season with salt and pepper, add a couple of ladlefuls of water and then put into the casserole a head of broccoli, which has been thoroughly cleaned, divided into small pieces and rinsed under cold water. Cover the casserole and leave everything to gain flavor for some minutes. Carefully scrape the pork rinds and put them to boil. When the water comes to the boil, throw away the water, extract the rinds, cut them into pieces and put them back to boil in more water until almost completely cooked. When the broccoli is half-cooked, put the rinds into the casserole with their stock and, if necessary, add more water in proportion, considering that the soup should remain fairly dry. Break the spaghetti into short pieces and as soon as the stock in the casserole has come to the boil, add the pasta and the salt. When the cooking is finished, serve the soup adding some grated cheese.
