INGREDIENTI:
per 6 persone
- Ā¾ lb Rice
- 2 lb chicory
- 1 tbsp extra virgin olive oil
- 3 Ā½ oz lard
- Ā½ onion
- celery
- carrot
- garlic
- parsley
- salt and pepper
PREPARAZIONE:
Wash the chicory with great care, boil it, drain it and chop coarsely.
Put into a casserole the oil along with the chopped lard or pork cheek mixture, the onion, a clove of garlic, parsley, celery and carrot and sautƩ everything.
As soon as the mixture is lightly colored dilute with 4 cups of water and season with salt and pepper.
Leave to cook for about 10 minutes and add the drained chicory and leave to gain flavor.
Add the rice to the casserole 20 minutes before serving and boil until āal denteā.
This soup should be nice and thick.
