  • 1 tablespoon lard
  • onion
  • 3 ½ oz jowl bacon
  • garlic
  • parsley
  • tomato sauce
  • potato
  • ⅝ lb Rice
  • salt and pepper
  • cheese
Preparation

In a casserole, sauté the finely sliced onion in the clarified pork fat, add a chopped mixture made with pork cheek or lard, a small piece of garlic and parsley. When everything has browned, douse with some ladlefuls of water, and to taste, add half a tablespoon of tomato conserve. Peel and dice some potatoes and put them into a bowl of water. When the sauce in the casserole comes to the boil, pour in the rice and diced potatoes, season with salt and pepper and when cooked, finish off with a little grated cheese.
