  • ⅝ lb spaghettini
  • ½ cup extra virgin olive oil
  • 2 tablespoons tomato sauce
  • 1 oz grated Parmigiano Reggiano cheese
  • salt and pepper
Preparation

Put the spring onions in abundant water and, without removing them from the receptacle to avoid irritating the eyes, remove the outer film. After peeling them, put the spring onions in a casserole, cover with water and add salt, pepper, oil and tomato conserve. Cover the receptacle and simmer until the spring onions are almost cooked. Break the spaghettini, add them to the spring onions, season with some more salt and cook, adding, with great discretion, some ladlefuls of hot water only if necessary, taking care, however, that the minestrone does not become too liquid.
