  • 5 eggs
  • 1 lb Italian “00” flour or all-purpose flour
  • olive oil
  • 1 lb honey
  • mixed candied fruit
  • almonds to taste
  • colored sprinkles
Preparation

Make a well in the center of the flour on a pastry board and break the eggs in the well. Using a fork beat the eggs and mix in the flour gradually. Make a soft dough and shape it into pastry sticks as if you were making gnocchi; then cut the sticks in small pieces. Deep fry the pieces in boiling hot olive oil, then drain them. Arrange them on a serving plate, in the shape you prefer, for example as a pyramid, ring-cake or in an oval shape. Pour the honey in a pot and bring it to the boil. Pour the hot honey over the fritters, then sprinkle over a few colourful candied fruits, almond halves and hundreds and thousands.
