  • 2 lb salt cod
  • 3 cloves of garlic
  • 1 cup extra virgin olive oil
  • 1 lb tomatoes
  • 7 oz black olives
  • 1 oz capers
  • 1 pinch oregano
  • all-purpose flour
Preparation

Clean and wash the salt cod, dry it and cut into regular pieces. Dry these well, flour them, and fry in a pan containing very hot oil. Drain when nicely golden and keep hot. In another pan, lightly brown the crushed garlic in little oil (remove as soon as it is golden) then add the tomato, capers, olives, and oregano. Leave the sauce to gain flavor and finish cooking. Arrange the salt cod fillets in an oven-dish, cover in the sauce (abundantly), put on the lid and stew in the oven for a couple of minutes. Serve immediately.
