  • 2 lb octopus
  • 3 ½ oz canned tomatoes
  • ½ cup extra virgin olive oil
  • 1 handful parsley
  • 1 chili pepper
  • 1 lemon
Preparation

Clean the octopuses thoroughly, eliminating the eyes, mouth and the sac. Wash them under running water several times. Beat them on a work-surface to tenderize the meat. Put in a pot with high sides, if possible earthenware, whole, and without drying them. Season sparingly with salt and add the whole chili, parsley, tomato and oil. To cook to perfection, cover the pan with a sheet of straw paper, fixing it with some string tied to the handles, and then close with the lid. Cook over very low heat for a couple of hours. When the cooking is finished, leave to rest far from the heat. Remove the lid and the paper, and eliminate the chili. Serve in the cooking pot, and cut into pieces at table. Serve lemon wedges on the side. Wonderful warm or even cold.
