Omelette with black olives

INGREDIENTI: per 6 persone
  • 6 eggs
  • 30 black olives , pitted
  • 1 handful parsley , chopped
  • 1 tbsp capers
  • 3 tbsp oil
  • salt and pepper t.t.
PREPARAZIONE:

Beat the eggs in a bowl and add the parsley, capers, olives, salt, pepper.

Amalgamate and pour the mixture into a pan where half of the oil is already smoking hot. Allow the edges to clot, using a fork detach them from the pan, make the still liquid mixture in the centre run towards the edges, so that the liquid part takes the place of the edges which are already cooked.

As soon as the omelette has clotted completely, shake the pan to detach it and put it upside down in a large plate.

Add the remaining oil in the pan and brown the other side.

 

Serve hot.
