INGREDIENTI:
per 6 persone
- 6 eggs
- 3 tbsp of oil
- 2 handfuls breadcrumbs
- 1 handful crustless white bread , soaked in milk
- 10 leaves of sage
- 1 ¾ oz grated Parmigiano Reggiano cheese
- salt
PREPARAZIONE:
Clean, wash, dry and chop the small sage leaves.
Beat the eggs with salt and Parmesan cheese in a bowl. Add the breadcrumbs and the inner part of the bread previously soaked in milk. Mix well.
Add the chopped mixture of sage and amalgamate everything well.
Once the oil is smoking hot, pour the mixture from the bowl into the pan, and stir quickly again for a second.
Once the omelette starts to clot, shake lightly the pan in order to detach it from the pan. Then, turn the omelette tossing it or turning it upside down onto a large plate. Add the remaining oil, or butter, in the pan and brown the other side.
Serve hot.
