  • 6 eggs
  • ⅝ lb broccoli rabe
  • 3 tablespoons oil
  • 1 handful parsley
  • 1 clove of garlic
  • chili pepper
  • salt
Preparation

Clean and boil the turnip tops. Stir-fry the tops in a pan with a little oil, garlic and parsley to flavor them. Before removing them, sprinkle with some chili pepper. Beat the eggs in a bowl with salt, add the turnip tops, mixing well. Pour in half of the oil when smoking hot in the pan. Once the omelette starts to clot, shake lightly the pan. Turn the omelette placing it upside down onto a large plate. Add the remaining oil in the pan and brown the other side.
