INGREDIENTI: per 0 persone
  • 1 lb white onion
  • 2 ½ oz beans
  • 2 ½ oz cannellini beans
  • 5 oz green beans , boiled
  • ½ head lettuce
  • 1 shallot
  • vinegar
  • Extra Virgin Olive Oil
  • salt and pepper
PREPARAZIONE:

Cut the onions in half, horizontally. Boil in salted water, acidulated with 1/2 cup of vinegar, until al dente. Drain and remove the central part, creating a little cup. In a bowl, mix together the central part of the onion, the borlotti and cannellini beans, and the green beans. Toss everything with a dressing made by blending a small shallot with oil, vinegar, salt and pepper. Divide the beans among the onion cups and place on a serving dish with lettuce that has been torn into small pieces and dressed. Then, serve.
