INGREDIENTS for 4 people

For the dough

500 g all-purpose flour

75 g granulated sugar

35 g raisin

30 g pine nut

5 g fennel seed

20 g pistachio

15 g orange flower water

15 g Marsala wine

150 g butter

 

 

For the biga

500 g all-purpose flour

40 g baking powder

280 g water

Preparation

Step 1

Dissolve the yeast in the water, blend in the flour and then put into a food mixer and mix well.

Step 2

When the dough is ready, leave to rest for 3 hours.

Step 3

Make a well in the center of the flour and put all the ingredients into it. Add the biga dough and mix everything together.

Step 4

Once it has been mixed well leave to rest for 15 minutes.

Step 5

Shape into small loaves and allow to rise.

Step 6

When the dough has finished rising, place in the oven for around 40 minutes.
